Double Radish Salad

This is a brand new salad for anyone looking for a crunchy, refreshing picnic dish that is oil-free and delicious.


2 cups shredded daikon radish

2 cups shredded red radishes

2 cups shredded carrots

1/2 cup chopped parsley

1/2 cup rice wine vinegar

2 Tbs. agave syrup

salt and pepper to taste

Combine all the vegetables in a bowl. Whisk together the vinegar, agave, salt and pepper. pour over the vegetables and toss thoroughly to combine. Cover and refrigerate for at least rwo hours and preferably overnight. Serves 8 as a side dish. 

This is a great picnic or potluck dish because it can sit at room temperature safely, it looks great and tastes great, and hardly anyone is allergic to any ingredients. It's vegan and gluten-free. If you've got a food processor or a mandoline with a shred or julienne blade it's a snap to make, too
