This is Your Brain on Donuts: How the Food We Eat Rewires Our Brain
12:30 PM - 1:30 PM
Consuming highly processed and palatable foods, like donuts, has a dramatic impact on the brain. Like drugs, these foods are able to hijack the neural circuits of reward in the brain and in some individuals produce symptoms of tolerance, withdrawal and relapse, similar to those observed in drug addicts. This hands-on session will first explore the sensory and metabolic characteristics of a food that make it more likely to act like a drug in the brain. Next we will learn which individuals are more susceptible to develop disordered eating, based on genetic, epigenetic and environmental evidence. Finally, the scientific evidence will be distilled into practical information on how we can avoid the pitfalls of food “addiction” and maintain healthy eating habits.
